100g radish
½ medium cucumber
100g baby plum tomatoes
20g flat-leaf parsley, roughly chopped
1 lemon
2tbsp. olive-oil
1 tbsp. sumac
1 tbsp. feta (optional)
pinch sea salt (to taste)
pinch black pepper (to taste)


1. First, cut the veg. Quarter the cucumber lengthways. Cut each quarter into roughly 1cm chunks. Then, quarter the radishes and tomatoes.

2. Tip the cut veg into a bowl

3. Stir in the parsley, juice of the lemon, olive oil and sumac, so the veg is coated.

4. Season with salt and pepper and top with feta (optional).

5. Serve with Labneh.
