My appreciation for the humble taco derives from its versatility. Whether you’re an avid vegan, meat-eater, spice enthusiast… the possibilities of taco bliss are endless. Favourite filling circa 2010? Easy. Bland beef mush, piled into crisp yet chewy Old El Paso shells, cascading cheddar, pale, shredded iceberg and one too many dolloping’s of sour cream. Sound familiar? What were we thinking. Thankfully, my soft spot for ‘Tex-Mex’ has positively perished and my love affair with authentic Mexican tacos has blossomed. The Capital’s flurry of credible new taco joints, abundance of innovative Mexican cookbooks and my own experimental recipe development, means, when asked my 2017 favourite filling, I am slightly stumped. Taco bout a difficult question (sorry, I had to). That said, I love a good fusion, so here are my slightly middle-eastern style taco inventions… enjoy.
